Recipe: Apple walnut protein cake bars

These apple walnut protein cake bars are easy to make, filling, and nutritious!

All you have to do is pop the ingredients into a blender and then bake them in the oven. These were one of my favourite snacks in between consults at student clinic during my nutrition degree. They’re filled with Omega 3 rich healthy fats, fibre, and protein to keep you full – plus they taste like apple crumble!

Ingredients:

  • 1 1/2 cups rolled oats
  • 1/2 cup vanilla protein powder
  • 1/2 cup almond butter
  • 1 cup applesauce
  • 2 tbsp honey or maple syrup
  • 3 tbsp almond milk
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup chopped apples
  • Handful chopped walnuts

Method:

  1. Preheat oven to 160°C / 320°F and grease + line a square baking tin with baking paper.
  2. Add everything (except the apples and walnuts) to a food processor and blend until almost smooth.
  3. Fold in apples and walnuts then pour into the baking tin and bake for 30-35 minutes.
  4. Drizzle with coconut butter if desired. ENJOY!
