Recipe: Overnight oats

Oats are one of the healthiest and most nutrient-dense grains on the planet – which is why we love them so much.

They’re naturally gluten-free and a whole grain, meaning they’re minimally processed, plus they are high in the soluble fibre beta-glucan, which helps to reduce cholesterol and blood sugar levels, promotes healthy gut bacteria, and keeps you fuller for longer (as they’re a slow-releasing carb).

Another praise to sing of this humble grain is that they’re quick and easy to prepare, just like this overnight oatmeal recipe – a balanced and filling breakfast that won’t break the bank!

Ingredients

Serving size: one

  • 1/2 cup oats
  • A handful of flaked almonds
  • 1/2 tablespoon cacao nibs
  • 1 tablespoon blueberries
  • 1 tsp cinnamon
  • 1/4 cup non-dairy milk
  • 1/2 cup coconut milk
  • 1 handful of sultanas
  • 2 tsp honey

Combine all dry ingredients in a jar or glass, add the non-dairy and coconut milk before stirring to mix it all together. Leave the mixture in the fridge overnight and top with honey in the morning – you can serve it with stewed apples or mix up your toppings as you please.
