Low-sugar banana and maca bread

When you have ripe bananas in your fruit bowl, banana bread is a must! Banana bread is such a staple and is perfect for those of us who are looking for a quick snack throughout the day.

Jane Houston, one of our nutrition students, is back with another tasty recipe that is sure to satisfy that afternoon sweet tooth…

I decided to add maca powder to this recipe for a nutrient-boost and, as it has such a delicious nutty flavour, it is perfect with bananas! This healthy banana bread is a great low sugar alternative to many banana breads, as the only sweetener is ripe bananas.

Ingredients:

  • 3 large ripe and spotty bananas
  • 1 ¾ cup spelt flour
  • 2 tsp baking powder
  • ½ tsp bicarb
  • 1 tsp cinnamon
  • 1 tbsp maca powder
  • 2 eggs
  • ½ cup coconut milk
  • ½ cup olive oil
  • Pinch of salt

Method:

  1. Preheat the oven to 170 degrees
  2. Combine milk, whisked eggs and olive oil in a large bowl and stir well to combine
  3. Mash your bananas in a bowl and add them into the wet mixture
  4. Then add the flour, baking powder, bi carb, cinnamon and maca powder
  5. Mix all ingredients together thoroughly, ensuring there are no bubbles of flour
  6. Pour the mixture into a greased baking dish
  7. Bake for roughly 30 minutes until the top is golden

Tip: To ensure the bread is completely cooked, insert a skewer into the middle and if it comes out clean, it is ready.
