Carrot cake but not as you know it

When we partnered with nutritionist and food as medicine queen Georgia Barnes as Endeavour’s latest ambassador, one of the highlights was getting an exclusive peek behind the scenes into Georgia’s kitchen where she shared with us some of her all-time favourite dishes.


Turn carrot cake into a nutritious and delicious snack with this amazing goodie ball recipe by Georgia Barnes. Packed with all the flavours you love in a carrot cake, these healthy treats are grain free, dairy free and gluten free. (Makes 12)

Carrot Cake Goodie Balls

Ingredients

1 carrot, grated
½ cup organic sultanas
1/3 cup coconut oil
½ cup preservative free shredded coconut
1 ½ cups organic walnuts, chopped
1 tsp cinnamon
2 tbs maple syrup
1 tsp organic vanilla essence
Pinch of salt
Additional shredded coconut for rolling
Marigold flowers to garnish

Method

  1. Place all ingredients into a food processor. Pulse until ingredients come together.
  2. Roll mixture into balls.
  3. Coat evenly with additional coconut. Arrange on plate and top with marigold petals.
  4. Serve and enjoy!
