Cooking Without... For Kids Lunchboxes

Laura Scherian will be cooking a couple of recipes that are great for the school lunchbox. Both recipes are easy for kids to join in, jam packed with nutritious and wholesome ingredients, freeze easy and can be adapted and changed to suit your family's taste buds.

Oat and Cranberry Snack Bar
These bars are the perfect replacement for store bought muesli bars, which are often filled with sugar and other nasty additives. These homemade muesli bars are high in fibre, healthy fats and jam packed with wholesome ingredients. This snack is sure to keep the kids satisfied and full of energy to play and learn for the entire day. So, take some time ‘oat’, and make these bars with your kids.

Ingredients list:

  • rolled oats
  • oat bran
  • brown rice flour (any flour will work)
  • coconut oil
  • tahini
  • honey
  • vanilla extract
  • sultanas
  • cranberries
  • pepitas
  • sunflower seeds
  • desiccated coconut
  • good quality dark chocolate chips (optional)

Strawberry and Banana Muffins
Full of quality ingredients and none of those nasties that are found in store bought muffins. Made with whole-grains, good fats and sweetened with only fresh fruit and maple syrup, means these muffins not only taste good but are great for you! They are a great breakfast option for on the run, snack for the lunch box and great for a picnic, plus they freeze well.

  • wholemeal or white spelt flour (or wholemeal or white plain flour)
  • rolled oats
  • bi-carb soda
  • salt
  • maple syrup
  • coconut oil
  • vanilla essence
  • organic eggs
  • organic bananas
  • organic strawberries

Laura Scherian (a.k.a Shez's Kitchen) grew up with fond memories of food. Her passion for food and cooking later developed further as her knowledge and understanding of nutrition expanded when she started studying Naturopathy at Endeavour. Alongside her studies, Shez also worked at Flannery's Organic & Wholefood Market which enriched her love for the industry. Shez now puts her knowledge of natural health into practice as a professional athlete.
